Easy Chicken Mole Recipe



Prep Time: 10-15 minutes     Cook Time: 25-30 minutes     Total Time: 35-45 minutes


  • 1 lb skinless chicken thighs
  • ½ teaspoon ground cinnamon
  • 1 8-ounce can tomato sauce
  • 1 chicken broth cube
  • ¼ cup mini semisweet chocolate chips
  • 1 tablespoon almond butter or natural peanut butter
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 2 tablespoons coconut oil
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1/2 teaspoon ground cayenne pepper
  • 1 can black beans


  1. Heat 1 tablespoon coconut oil over medium heat. Add the chicken, pour salt and pepper over it. Cook until browned on both sides for 25 minutes. Then transfer to a plate
  2. Heat 1 tablespoon coconut oil over medium heat on the same pan. Add garlic, chili powder, cayenne pepper, cinnamon and a teaspoon salt to the pan. Stir until fragrant for about 10 seconds. Add tomato sauce, chicken broth, chocolate chips and almond butter; stir and combine. Bring to a simmer. Reduce heat to medium-low then add cooked chicken
  3. Let it simmer until chicken cooked for another 5-10 minutes
  4. Serve with black beans and Spanish rice
