Vietnamese Chicken Rice Noodle Recipe

Are you craving for Vietnamese food? Try this fusion style Vietnamese chicken rice noodle recipe. This tastes like an authentic Vietnamese restaurant dish, except the chicken is not grilled. I also used Filipino rice noodles instead of vermicelli. However, you can use whatever Asian rice noodles you prefer. I also chopped up a lemon peel since I didn’t have lemongrass.

This recipe can take awhile to prepare but it’s worth it. Enjoy!

Prep Time: 30-60 minutes     Cook Time: 25-30 minutes     Total Time: 55-90 minutes

Ingredients:

For the chicken:

  • 5 cloves garlic (minced)
  • 1 shallot (minced)
  • 2 green onions (sliced)
  • 4 lemon peels (minced) or 4 pieces lemongrass
  • 4 tablespoons cilantro (chopped)
  • 1 lemon
  • 1 tablespoon coconut sugar
  • 1 tablespoon maple syrup
  • 2 tablespoons fish sauce
  • 3 tablespoons soy sauce
  • 1 lb chicken thighs
  • 1 pack rice noodles
  • 2-3 cups of water
  • 1/2 cup chopped peanuts
  • 1 tablespoon coconut oil

For the nuoc cham sauce:

  • 2 tablespoons fish sauce
  • 1 lemon
  • 3 tablespoons coconut sugar
  • 1/2 teaspoon red chili pepper

Instructions:

  1. In a medium size bowl, add the garlic, shallot, green onions, minced lemon peel/lemongrass, cilantro, coconut sugar, maple syrup, fish sauce, soy sauce
  2. Add the chicken. Then squeeze one lemon and mix all together by hand
  3. Cover the bowl and marinate for 30 minutes
  4. For the nuoc cham sauce, mix all the ingredients together and set it aside
  5. Heat a large pan in medium heat, then add 1 tbsp coconut oil
  6. Carefully put the marinated chicken in the pan with a little bit of marinade sauce on top of it
  7. Cook the chicken for 25-30 minutes
  8. Heat a big pot and add 2-3 cups of water. Then add the rice noodles
  9. Boil the noodles for 15-20 minutes or until it’s cooked
  10. Drain the noodles
  11. Serve the noodles and chicken together, topped with peanuts and nuoc cham sauce

Yields: 1-3 servings
