Paleo Chocolate Cake

Holiday season is the best time to eat a lot of sweet foods. For many of us who want to maintain our Paleo diet, it’s not easy to find Paleo or healthier cakes being sold in the mainstream markets. If you have these ingredients in your pantry, try this recipe to satisfy your craving for a chocolate cake.

Prep Time: 10 minutes        Cook Time: 20-25 minutes          Total Time: 30-35 minutes

Ingredients:

1/4 cup maple syrup

1/2 cup melted coconut oil

1/2 cup raw cacao powder

3 large eggs (separated)

2/3 cup coconut sugar

1/2 cup almond flour

Instructions:

  • Preheat the oven to 350°F
  • Line your 9-inch pan with parchment paper
  • In a small sauce pan, mix the maple syrup, cacao powder, and melted coconut oil (heat at low temperature)
  • Separate the egg whites from the egg yolks
  • Mix the coconut sugar with egg yolks, then combine the maple syrup mixture and almond flour
  • Whip the egg whites until they’re very frothy
  • Once the egg whites are whipped, mix them with the rest of the egg yolk mixture
  • Pour it over the lined 9-inch pan and bake it for 20 to 25 minutes
  • Let it cool
  • Sift cacao powder over it (optional)

*Serving size is for one to two people.
